Chocolate Walnut Energy Bites

After chatting with friends, family, and clients, I recognized a very consistent theme among all of them…. the need for healthy, homemade snacks that rival readily available grocery store treats. The perfect “in between” snack can be hard to nail. It’s a little salty and sweet, easy to prep, and most importantly provides satiating power.

Unlike a typical protein bar, these decadent energy bites pack a healthy punch of fat and protein, dietary components which help keep hunger at bay. These chocolate infused morsels are packed with superfood ingredients (walnuts, almond butter, & cocoa) and have a balanced flavor profile from orange zest, sea salt, and high quality vanilla.

Walnuts are the star ingredient in this simple snack. In a nutshell, they are rich in omega three fatty acids, manganese, copper, biotin and vitamin E.  Walnuts have been shown to reduce the risk for various cancers, improve brain function, and protect against cardiovascular disease. In addition, recent studies have shown that the consumption of walnuts increases three strains of bacteria in the gut. A diverse microbiota aids in the production of butyrate, a metabolic byproduct, which improves bile production and colon health.

Roasting walnuts allows the release of essential oils, and creates a warm, toasty flavor which pairs excellently with chocolate!

Smart Tip:

When buying nuts and seeds, opt for organic and choose raw varieties with skin. Nearly 90% of the walnut’s antioxidant and anti-inflammatory properties are found within the skin.

Chocolate Walnut Energy Bites

Ingredients

  • ⅔ cup raw walnuts with skin
  • 8 large pitted dates
  • 2 heaping tbsp natural almond butter
  • 1 tsp vanilla
  • 1-2 drops stevia (optional)
  • 1 tsp orange zest
  • 2 tbsp cocoa powder
  • Pinch of sea salt
  • ½ cup unsweetened, shredded coconut for rolling

Instructions

  • Preheat oven to 350 degrees.
  • Roast walnuts on a baking sheet for 6-8 minutes.
  • Pit dates and place in food processor.
  • Add roasted walnuts and pulse slightly until chopped.
  • Add almond butter, orange zest, vanilla, stevia, and cocoa powder.
  • Pulse on an off for 10 seconds, until the mixture is smooth.
  • Using a tablespoon, “scoop” 15 rounds.
  • Roll the bites into a small ball, then coat in shredded coconut.
  • These energy bites can be eaten immediately or stored in the refrigerator for up to 10 days.
