Green Goddess Dressing with Sweet Peas and Mint

Are you looking for a healthy green goddess dressing to brighten up summer salads and crudite? This herb infused rendition with sweet peas and mint is a showstopper! This recipe is jam packed with fresh basil, mint, parsley and avocado —-we can’t put it down!

The benefits of using fresh herbs

Herbs such as basil, mint and parsley provide a punch of flavor and a host of health benefits. Basil is a powerful antioxidant with anti-cancer properties. Mint is a well known digestive aid, improving bile secretion and diminishing belly bloat. Parsley reduces inflammation and oxidative stress, while also functioning as a natural diuretic.

Healthy dressing doubles

WeCollab’s green goddess dressing has a thick texture allowing it to double as a condiment, dressing, dip, or spread for sandwiches and wraps. Try mixing it up. Use this dressing with sliced carrots and celery, or toss it with fresh zucchini noodles. If you prefer a thin salad dressing feel free to scale back the amount of peas or add additional citrus juice during the emulsification process.

Use what’s local and fresh

If you have access to seasonal fresh herbs, feel free to swap out your choice of herbs for some of the ingredients listed in the recipe. We like dill, cilantro, & thyme!

Smart Tip:

If you’re trying to cut back on food additives and added salt, experiment with herbs! One of my favorite tips for clients is to add herbs first and season with salt and pepper after!

Green Goddess Dressing with Sweet Peas and Mint

 PRINT RECIPE

Ingredients

  • 1 garlic clove
  • 1 cup fresh peas
  • 1/2 avocado
  • 1/2 cup mint
  • 1/2 cup basil
  • 1/2 cup parsley
  • zest of 1 lemon
  • juice from 1 lemon
  • 1 tbsp water
  • 2 tbsp rice wine vinegar
  • 1 tbsp avocado mayonnaise
  • salt and pepper to taste

Instructions

  • Poach and drain peas
  • Add garlic, peas, avocado, mint, basil, parsley, lemon zest and lemon juice to the food processor
  • Pulse mixture for 20 seconds
  • Add water, rice wine vinegar, avocado mayonnaise, salt and pepper
  • Pulse for another 20 seconds. Repeat pulsing until dressing is smooth & creamy
  • Season with additional salt and pepper to taste
  • Refrigerate in an airtight mason jar for up to 3 days
